Key Lime Pie!




Key Lime Pie


Filling


1 (140z) can sweetened condensed milk


1/2 cup key lime juice


1 tsp grated lime zest (I don't add this)


2 eggs yolks


1 whole egg




Graham cracker crust


1 1/2 cups graham cracker crumbs


4 tbsp sugar


6 tbsp melted butter




Mix together and press into 9 inch pie pan. Bake at 350 for 8 min.


Meringue


2 egg whites


4 tbsp sugar




Directions:


1. In a medium bowl, blend together condensed milk, lime juice, and zest. Mix in egg yolks and whole egg. Pour mixture into crust, then cover and refrigerate for 1 hour.


2. Preheat oven to 350.


3. To make meringue: In a large metal or glass bowl, beat egg whites until foamy. Gradually add sugar, continuing to beat until whites form stiff peaks. Spread meringue over pie, covering completely.


4. Bake for 15 minutes. Chill before serving.




This pie is so good. I am taking it to a baby shower next week. I wanted to make sure it was good before I took it somewhere. I will be making this every summer.
